Hummus

Recipe

(from How to Cook Everything Vegetarian):

  • 2 cups canned chickpeas, drained
  • 1/4 cup tahini (with oil)
  • 1/4 cup olive oil
  • 4 cloves garlic
  • 2-3 tbsp lemon juice
  • 1-2 tsp lemon peel
  • salt and pepper
  • 1 tsp paprika
  • ~1/2 cup water

Put the chickpeas, tahini, garlic, oil, & lemon juice in a food processor and combine until a thick paste forms. Drizzle in water with processor running until it reaches the desired consistency. Add the spices, process,  taste, and adjust flavors as needed. Serve drizzled with olive oil and sprinkled with parsley, or just do what I did and stick your finger in the bowl.
