Peaches

It’s peach season here in Colorado, and let me tell you I am one happy camper. These peaches are sweet, juicy, and ripening faster than Dan and I can eat them! We had a few I didn’t want to lose this morning, so I decided to peel* and macerate them – this way, they can hang out in the fridge for a few days until I have a chance to buy more to make jam/preserves/bbq sauce/whatever with. These are macerating with a 1/4 cup of sugar, some Bulleit bourbon, and a vanilla bean. I can’t even describe how amazing…

* To peel peaches, score an ‘x’ on the bottom of each peach, then boil them. When you see the pieces you scored start to peel back, remove them and submerge in a cold water bath. Easy as pie!
